Chef Kamal Hoyte is from the Caribbean Island of St. Vincent and The Grenadines where he grew up eating fresh local seafood nearly everyday.
In 2010, he graduated from The Culinary Institute of America and cultivated his skills while working with some of the most renowned chefs in NYC at Oceana Restaurant and Restaurant Daniel in NYC. Today, he is the Executive Chef at Pekarna NYC.
During his spare time, he is experimenting with new ingredients and perfecting his skills, whether that is through cooking, tasting, or experiencing new cultures.

I am not the biggest food critic out there, but I was so satisfied by the delicious food I had at C'est Si Bon's recent pop-up dinner at Black Bird in Brooklyn. The restaurant itself had the nicest ambience I have had in the U.S., with modern decor and pleasant music that made it possible to carry out nice conversations throughout the night. Chef Kamal's crew approached the night like a family gathering with exquisite food. I say family gathering not because it was not fancy as every dish struck a nice balance between fine dining and deliciousness that my unsophisticated taste bud would appreciate, but because the staff were super warm and thoughtful in making sure that they got our specific orders correctly and we all had a lovely time interacting with them. Chef Kamal came out to share a bit about each course, and no matter how personalized we each wanted the main courses, he made it tasty for each and every personalized order. We hear that they will continue to host these pop-up dinners or brunches aside from their regular catering and special event services. It was definitely a wonderful evening. They also had wine pairings to go along with each course and this was certainly my sign to do this more often. Chef Kamal came over and explained every item that was served and it really helped bring Caribbean inspired cuisine to a whole new level. I debated long and hard before posting this review. I must first say that I was given a 20 percent refund to address my concerns. But my experience was so bad that I still felt it was important to warn others. This party was to celebrate my 60th, and I wanted it to be really special and elegant. I worked with Chef Kamal to come up with a simple menu that would work for a buffet and make a beautiful presentation. Sadly, that's not what I got. The "charcuterie board" was grocery store pre-sliced cheese, Ritz crackers and a few grapes. The cheese actually started to turn shiny and oily after the first 45 minutes of the party. The "shrimp cocktail" were small, frozen Great Value brand shrimp. I saw the bags in my kitchen. I tried to tell myself that maybe one of the dishes called for a shrimp stuffing, that maybe there was some other explanation. Because I knew this was not the quality of shrimp anyone would use for shrimp cocktail. Sadly, I was wrong. As was previously mentioned, they were served swimming in a spoonful of cocktail sauce with the tails on. What were guests supposed to do with that? Swallow the tail? Spit it on the floor? Put their fingers into the pool of cocktail sauce to pick the shrimp out? I was promised roast beef tenderloin, and what was provided was small pieces of overcooked beef swimming in a brown sauce. The best tasting thing served were the potatoes. Chef Kamal did a quick walk through and then left for another event. I was told in advance that this would happen, but only two days in advance. So, there wasn't much I could do about it. The staff began immediately to go through my cupboards and help themselves to pots, pans, baking dishes, serving dishes, seasonings and the like. No one discussed this with me in advance. What if I didn't have the things that were needed? Metal implements were used in two Calphalon nonstick pans and they were both ruined. One glass skillet-lid is missing completely. Dip was served in a soup bowl that was completely inappropriate, and which looked unappetizing. No one asked me if there was something better to use. Finally, the kitchen was left so dirty that I had to scrub the floors before I could even walk in there. Fortunately for me I was surrounded by people I loved, the music was good, and the wine was flowing, and I was able to let go and be present in the moment and really enjoy myself. But as I reflect on the event, notwithstanding the 20 percent refund, I feel very much taken advantage of. Some of the things were truly an embarrassment to me as a host. I was at a September private home event in the Bronx. I don't normally criticize event foods, however I knew first hand how close the host worked with this caterer to throw their event. The host is a true "foodie" and wanted something special for their guests. The event hor's deuvres looked NOTHING like the caterer's website images. I have never seen such an unappetizing "charcuterie display" at an event. The only hor's deuvres creation that looked nice and tasted great was a tuna tartare that was displayed on a plastic spoon. I am so critical of shrimp cocktail in general, but these were unfortunately small shrimp displayed swimming in cocktail sauce in a pastic spoon too. However, with the tail still left on the shrimp, once you put the spoon of shrimp in your mouth, you then had the surprise of dealing with a tail in your mouth too. Drink in one hand, spoon in the next hand, and now a shrimp tail to deal with in my mouth. Unfortunate. The dinner buffet look nice. The potatoes were delicious, and the asparagus were okay, but that was where it ends. The "filet of beef" was ABSOLUTELY NOT a filet of beef cut of beef. Each piece was fully cooked threw as a well done temperature and impossible to cut with a fork and knife. It could not have been filet of beef. If I could not cut it with a knife, I would not put it in my mouth, so I can not tell you about the taste, it went into the trash. Each of the guests I spoke to were talking about the struggle of the "tough beef" that they did not eat. The salmon looked amazing, but was overcooked and dry. Thankfully it was in a sauce to bring some moisture to actually eat. It had a decent flavor profile, but so dry. The staff seemed attentive in keeping things picked up, however I ended up with my plate being picked up quickly and the greasy dinner knife falling on my lap on my khakis. There was no apology from the server. No offering of can I get you some seltzer and a clean cloth. Just picked it up off the floor and walked away. Dessert was amazing because it was a cake and chocolates brought in from an outside purveyor separate from the caterer. I would never suggest using Chef Kamal's C'est Ci Bon Catering for an event. Maybe his website shows nice events, but when so many things go wrong at one event, I can not take a chance that I would get that service at my next event.
